Jackfruit Rolex
Ugandan rolex (no, not the expensive watch brand!) is a popular and affordable street food that is essentially an egg omelette rolled inside a flaky chapati (flatbread) - taking its name from how its assembled (shortened to 'rolex' from 'rolled eggs'). It's popularity is not surprising given how easy it is to prepare and that it serves as a go-to choice for any time of the day. This vegan recipe ironically replaces its namesake - the 'egg' - with young jackfruit but promises to taste even better than the original Ugandan delicacy that rolex has become!
